I want to know how to read headers, and understand where emails are really coming from... I may or may not be being scammed.

It's the contents of the email that really proves it's a scam. Can you quote it?
Some email services such as Gmail, strip the sender's IP address, so you can't trace him.
As you're suspicious, I'm almost certain you're being scammed.

Scammers can be of any race or nationality and exist in nearly all countries, so email headers are really not a good way to prove whether it is a scam or not.
