This is a time of the year for Just Cold to be festive.

He makes so wonderful meals Shocked

or should I say creative meals with what he has to work with.

I am thinking what does he do with the left overs.

My first thought is possum soup with carrots.

Second thought road kill slow cooked with dandelions smathered on grits.

He may have sent a recipe to B8er.

Please post your recipes to hepl JC or your well wishes for a plentiful road kill year.

Ps: The dishes must be able to be gummed. Jc is country folk and he has no teethe.

Jc's people don't read or write too well, so there's no recipes it's all handed down verbally from generation to generation along with the other important information like how to Noodle, how to grow the perfect mullet and the rules of NASCAR.

He'll probably have to travel to the big town to find someone to read this for him:

Armadillo Fricassee

Ingredients (that's 'things to put in the pot' in Redneck)
1 armadillo, cut into pieces
2 med. potatoes
2 onions, sliced
2 carrots, coin chopped
1 stalk celery, chopped
1 bay leaf
1/4 tsp. thyme
1/2 c. butter
1/2 c. flour
1/2 tsp. salt
1/4 tsp. pepper

Dust armadillo meat in flour, salt, and pepper. Brown on both sides in the butter. Put enough water in pot to cover after adding remaining vegetables. Cover and simmer until meat is tender, about 2 hours. Add seasoned flour and water to thicken liquid.

Goanna Tail
Scald and skin the tail of a goanna.
Cut into three-inch slices.
Dip in egg and bread crumbs, and fry quickly to a golden brown.
Olive oil is the best to fry in.

Goanna Tail with Parsley Sauce
Skin tail and cut into small pieces.
Place in a saucepan, and just cover with water.
Cook till tender.
Make parsley sauce as follows:
Boil one pint of water, throw into it one tablespoon finely minced parsley and half a teaspoonful of salt.
Then add two ounces flour, mixed to smooth paste in a gill of water.
Stir over fire until it thickens.
Break into it one or two ounces of butter.
Put cooked tail into this, and serve hot.

Tasmanian Native Hen
Place plucked and gutted Native Hen into a large pot of water with an old boot and boil until boot is tender.
Throw away Native Hen and eat old boot.

Noobs. Confused

Thanks Yas, but the closest we have to a Tasmanian hen is the Greater Sage Grouse and they are scarce. We can't afford to eat them ....we just milk them and let them go.

Possum Casserole

1. Skin and bone the possum (use only the best meat for the casserole, ie: the strip loins and hind quarters, cubed).
2. Reserve the carcass and trimmings for stock.
3. In a heavy pan, heat the clarified butter and oil. (JC you can use lard)
4. Sauté onion and garlic. (Use what herbs you can find JC)
5. When onion is clear, remove to casserole.
6. Dust the cubed possum with flour and brown in batches.
7. Add to casserole.
8. Melt a little more clarified butter and sauté bacon and mushrooms.
9. Remove to casserole De-glaze pan as necessary with red wine- add this to casserole together with herbs, ground pepper, tomato purée, beer and marsala. (Yes, JC you can use your own made brew/non taxed beverage).
10. Stir, cover and cook in slow oven for 2-3 hours, adding more possum stock if necessary.

Padme gave you an easy solution. Use the old P-38 for the can, that has been passed down to you.

In or about 5 or in 10 years this will be JC.

He will find some land away from the 50 people in his small country town.

JC will camp out to hunt, eat berries and forage. Cook his road kill over an open fire.

^^^ JC is a want a be. But not cultured enough to be from the Carolina's.

Popcorn Sutton is a hero around in these parts.

He only made non taxed liquor.

As of today you can buy his taxed liquor at the store.

JC eats cornbread and beans regularly no teeth required.

His prefers grits for his morning eat.

CROCK POT ROAD-KILL STEW

5 carrots, cut up
1 lg. onion, diced
2 lbs. stew meat, cut in pieces
1 can mushroom soup
6 med. potatoes, cut
1/2 c. soy sauce
2 c. water
2 tbsp. lemon juice

Put all except soup and lemon juice in crock pot at 7 or
8:00 a.m. At 4 or 5:00 p.m. add soup and lemon juice.
Thicken with a little cornstarch and water.
