I wonder whether he's just being obstinate for the heck of it, or if he's up to what he thinks is some kind of vudu or other power.

If you tire of merely contradicting him, you might try appearing to be slowly "giving in" to the power of his words, but then in the process of getting ready to pay you "recover" enough to not obey. If this gets him going, you might have a hook for a supernatural twist to the bait (his magic vs your character's).
