There's a decent article on Con Artistry at How Stuff Works:

I think they cover the topic pretty well. The second page of the article has a section on advance fee fraud and ebay scams.

There's no mention of scambaiting, but that's ok...

There is also a book from the 50's "Hidden Persuaders" by Vance Packard that explains how advertisements work and how people are influenced. It is very interesting in seeing how anyone can be influenced and how all these techniques have been scientifically proven. A newer book called "The Power of Persuasion" by Robert Levine is again about how people are influenced and how cons and pressure sales work.
