I have just succsessfully demolished a lamb bhuna & rice, served with
a coriander and garlic naan, lime pickle and mango chutney, followed
by a fruit salad consisting of apple, strawberries, raspberries, mango,
cherries and pineapple. Very Happy

Now, where's the beer!

I had a ton of radishes in the garden that were starting to bolt and were getting woody. I made them into refrigerator pickles and just had a bratwurst topped with them, and good mustard.

If anyone is interested I will post the recipe. Super easy, even SOOI could figure it out.

Just finished homemade meatloaf, mashed potatoes, white pepper gravy, and watermelon.

@ TheFae, pretty basic refrigerator pickle recipe. Add, subtract, substitute and modify as you see fit.

The brine:

1C Vinegar
1C Water
1C Sugar
Turmeric and Cayenne to taste, I used about a 1/2 tablespoon of each.

Bring all to a boil and set aside to cool.

Slice Radishes into thin rounds, salt liberally, toss and set into a colander for about an hour or so to draw out excess water. Rinse well, pat dry and pack into a Mason jar with garlic, onion slices or whatever the hell else you please. Pour in brine and refrigerate for a few days.

^^ Pickling watermelon rind tomorrow, but am adding your radish recipe to my collection. Wonder if they can be hot packed or canned with pressure cooker?

^^I'm sure you could. Since radishes are probably considered "low acid" I wouldn't settle for a hot water bath and would go with pressure cooking. I dunno, they might get mushy, might be better to include them into a chutney or something similar.

I did the refrigerator pickles on a whim, I hated to see them go to waste. To be honest, I usually make shit up as I go along. There were several recipes on the internets and I just improvised from there.

^^ I am thinking "sugar" vice salt. Most call for sugar but very little salt (usually 1/2 to 1 tsp of the latter)

Yes, regular white granulated sugar, It makes a sweet and sour brine. I guess "brine" was the wrong word since most brines include salt.

These are only to remain refrigerated and will keep in there for a few weeks.

I'm fixin' to have me a burrito at Deli Cioso, smothered in hot green chili and wash it down with a Mike's Hard Lime (sissy margarita). Then, I'm going to flop on the couch and watch Wipeout, which I recorded last night.

Tonight, I plan on being kicked out of the bedroom and getting a peaceful night sleep in the guest bedroom. Razz
