This romantic scammer I'm working wants me to switch from chatting via PM on Twitter to using the Hangouts app. I have set one up with a new email address under a false name. Is there anything I should be aware of as possible pitfalls for switching to Hangouts? Why would they want that?

Only reason I can think of is that it allows them to message you instantly, rather than wait for Twitter to update (Unless Twitter's PM system is just a chat system, I'm not sure, I never use Twitter). The faster chat probably just means faster money for them.

Do be aware phone and video calls can be made through Hangouts. The lad may be attempting to verify you are who you say.

I purposefully did not include a phone number when setting up the Hangouts account, so I think I'm safe there. I'm expecting more efforts to be sure of my identity soon. So far the lad just keeps asking for more photos

Well, people can call you through hangouts, like Skype can. They won't call directly to your phone, but rather to your computer via VOIP, and if you have a webcam or mic on your computer, they can converse with you over voice or video calls.
