Why not download audacity (http://audacity.sourceforge.net), it's free and in theory you should be able to use it to record whatever is on the wave channel on your PC (Don't have a Mac myself, but I suspect it'd be a similar thing), and audacity is available for Mac and Linux as well.

If you mean record as in keep the text in order to post here, the method I use is at the end of the session there is an option to convert the conversation to email. I then save this as a draft and simply copy and paste. I then leave it in the draft folder for future reference.
