You've already laid the groundwork. Ask him exactly how you go about making a Moneygram payment.
Once he's explained all that, just make up an 8 digit number and send him that along with a question and answer. Obviously, it will be the wrong number and you'll have to email him again as you put two of the digits out of order. Then, when that bounces, he'll probably want a scan of the receipt. That's when you start sending him junk files and begin slapping him for being unable to open them.

Tell him you want the invoice immediately after sending the first fake Moneygram payment. The chances are that you won't get one, but you might be able to make him squirm a little bit. If he refuses to send you an invoice, you can always ask for something in writing (such as a contract), just so that you are satisfied that everything is up-front and legal. You may even want to pursue this line before proceeding with the first Moneygram payment.

Please don't open multiple threads on the same subject, especially if you're not asking any questions. If you want someone to bait for you feel free to post the opening scam email in the Surplus forum.
