Ingredients:

Olive oil
Madras curry powder
3 medium onions
2 boneless, skinless chicken breasts
5 strips bacon
Can diced tomatoes
clove garlic
3 bell peppers
Patak's Hot curry paste
1 ghost pepper (bhut jolokia)
Sriracha sauce |
Julienne chop the onions and cube the chicken. Cut the bacon into 1" lengths. Dice amount wanted of garlic. Chop up the bell peppers. Carefully cut up the ghost pepper. Place a sign on the toilet reminding you to wash your hands.
Pour a few glugs of olive oil in a large pot on high heat after it meets the "water immediately vaporizes" test.
Wait a while, then pour in about 2 tablespoons of curry powder. Swish it around.
Add the onions. Stir them around til they get golden and translucent.
Add the ghost pepper, quickly stir and try not to breathe. Add the chicken and bacon and bell peppers. Stir until the chicken is white on all sides.
Add the garlic and the can of diced tomatoes. Add half a can worth of water.
Bring it back to a boil.
Add about 4 tablespoons of the curry paste and stir in. Add as many squirts of the sriracha as you want.
Reduce heat to medium-low and simmer for 20 minutes.
Pop it in a bowl and eat with warmed naan or rice.
The amounts of everything can vary, and I am sure you may want to dramatically decrease the spiciness. Soak up the excess oil with a coffee filter if you want, etc. This is pure, Grade-A bachelor food, and the only rule is that it has to taste good when it's done.
This recipe makes enough to fill your belly, and have left overs for the next day. Trust me, it tastes even better the next day. Leave out the chicken and bacon, and you've got yourself a good home-made curry sauce to add to other dishes. |
