...this is the first time I have hosted Christmas. How long can that turkey stay in the fridge? |

Depending on how soon it went in the fridge after it was cooked, but I would be beggining to think it is time to let go personally. |

Sounds like time to think soup!
First, you need to make stock by simmering the bones (see any good recipe book for instructions) then you can try this. It's one of my favorites and what I made after the first Christmas dinner I hosted.

1T cooking oil
2 large onions - thinly slice and separated into rings
leftover turkey or chicken meat (I've sometimes cooked fresh just to make the soup)
2 cloves garlic, finely chopped
1 16oz can chopped tomatoes
1 cup dry white wine or sherry
1T sugar
1t dried thyme leaves
1t salt (to taste)
1/4t pepper (to taste)
1 medium green pepper cut into 1/4" strips
Slices of French bread, toasted
Snipped parsley
Heat oil, cook and stir onions and garlic until tender.
Add tomatoes with liquid.
Add about 2 1/2 cups broth (freeze any that is unused and save for more soup, risotto, etc).
Add wine/sherry, sugar, thyme, salt, pepper, turkey.
Cover and simmer 15 minutes.
Add pepper strips & cook about 10 minutes more.
Place toasted bread in dish and pour soup over the bread.
Sprinkle with snipped parsley. |

Great link Tommo. We had company over this year so I cooked two turkeys. One carcass went outside that evening and we watched a 'posum family go at it until a raccoon came. I'm going to pressure cook what is left over today. After 20 minutes up at temp and pressure everything should be ready to follow Mr. Green's recipe. |

Thaw well in July, let the pussy cats make sure they get territorial upon it, let them, (the cats) drag it about in the damp soil for 2 days; Pray for snow and/or rain.
Next give the birds to the dogs for exactly 5 minutes (1 week ahead)
Now, pack the body cavity with whatever weeds and sand are around.
Set oven to 125, cook until X mas night. Serve at 5 AM blood letting served with cold beef Jello. and chilled rice. |

I visited a sibling one year for thanksgiving, kind of at the last minute, many years ago.
He bought a turkey real fast before I arrived, left it in the sink to thaw.
I noticed the next day the skin looked wierd, there was a chunk missing from one side.
He said it was a 'parts missing' turkey.
(Sometimes you can buy one that is heavily discounted, and has had something unsightly cut away.)
After dinner, he admitted his cat had been gnawing away at the frozen turkey in the sink overnight...

Throwing a roast bird carcass in the bin is a travesty!
Do as Connie and Mr Green said, and boil dem bones up! Throw in any raw vegetables that you have kicking around such as a carrot or half an onion, some flavouring ingredients like parsley stalks, a garlic clove or 2, some peppercorns....
Boil it all for about an hour in a normal saucepan, hey presto, great stock. The basis of any good soup.
Unfortunately I had beef for xmas, which I had to bin by the 27th. It was cooked rare after all, and I didn't want to poison everyone. |
